Nun 200g Rinderhack zusammen mit 2 in Ringe geschnittenen Zwiebeln und 4 gepressten Knoblauchzehen anbraten. Die Masse mit 4 gewürfelten, entkernten Tomaten, Auberginenfleisch und 1 Hand voll gehackter Petersilie, etwas Rosmarin, Oregano und Thymian vermengen, salzen. Auberginen damit füllen. Jeweils nochmals frische Tomatenscheiben auf die Auberginen legen.
In eine Auflaufform legen und etwas Wasser und Bratsaft aufgießen, so dass die Auberginen 1 cm in Flüssigkeit liegen. Bei 180 °C 30 min im Backofen garen.
